These Chocolate Peanut Butter Banana Oat Waffles are SO delicious and rich, you won’t believe that you made them yourself AND that they’re packed with nutrient-dense, nourishing ingredients!
After overnight oats, I think that waffles may be my favorite breakfast.
I love that they’re crispy and soft and that you can change the toppings and switch it up, MHM.
And I’m sure we know by now, I love everything chocolate + peanut butter + banana, so it’s a no-brainer that I absolutely love these Chocolate Peanut Butter Oat Waffles.

Ingredients in Chocolate Peanut Butter Oat Waffles
Oat Flour: These will be the main base of the waffles! I personally never buy oat flour, I always make my own. Just blend up some rolled or quick oats in a food processor until it’s a fine powder and ta-da, you have oat flour!
Chia Egg: I like to use chia seeds as an egg replacement and to get in lots of nutrients! Mix 1 tbsp of chia seeds with 2.5 tbsp of water and let it set for 3-4 minutes. Then stir it and lit it sit for another 1-2 minutes and it’s done! You can also try subbing for a regular egg or a flax egg.
Peanut Butter: My favorite ingredient. We use 1 tbsp in the waffle batter and as much as your heart desires for topping (I do hella because toppings are the best part). If you have a peanut butter allergy, sub with another nut or seed butter you can tolerate!
Banana: Use a medium, ripe banana! We’ll use 1/3 of it in the batter, and the rest for topping!
Cacao Powder + Chocolate Protein Powder: We need to make it chocolateyyyy! If you don’t have cacao powder, you can use a high-quality cocoa powder (not Hershey’s sorry :/ does not taste very rich). If you don’t have a chocolate protein that you like, no worries! Just sub with an equal amount of cacao powder!
Soymilk: I like to use soy milk because it has a higher protein content which I find makes the batter more thick and creamy and helps the batter turn out more fluffy. If you don’t have soy milk, try using another higher protein milk!
Lemon juice + Baking Soda + Baking Powder: This is going to help the waffle rise and be fluffy! If you don’t have lemon juice, you can substitute it with apple cider vinegar. We just need something acidic to react with the baking soda
How to Make:
Prepare: Make your chia egg. Turn on your waffle iron to medium-high heat. Turning your waffle iron on now is important. We want the waffle iron to be very very hot! I like to make sure mine has the ready light on for at least 5-7 minutes!
Combine Wet Ingredients: In a small bowl, mash 1/3 of the banana. Then add the peanut butter, lemon juice, and chia egg.
Add Dry Ingredients: Add the oat flour, chocolate protein powder, cacao powder, baking soda, and baking powder.
Mix + Add Milk: Mix together the batter. Add in the 2 tbsp of milk and mix well. Add in another 2 tbsp of milk and mix well.
Rest: Let the batter rest for 4-5 minutes. Once the batter has about a minute left of resting, grease you waffle iron with some oil. It should sizzle.
Make: Spoon the batter into the waffle iron and spread evenly. Close it and let cook.
Now this is kind of tricky. Every waffle iron is different, so you may fail the first time like I did. But I’ve learned a couple things that may help you. My ready light for the waffle iron came on about 2 minutes after I put it in and it was not enough.
So, the second time I made it, I kept the iron closed after the ready light came on and waited another 2 minutes.
I sort of gauge that it’s done when the smoke coming out of the waffle iron starts to lessen and the waffle becomes really, really fragrant.
But again, every waffle iron is different, so you might need to experiment a little!
I also just try not to open it early because mine never comes back together after the waffle splits and is half done. I can always fix it if its burned with extra toppings 🙂
Why Are These Chocolate Peanut Butter Oat Waffles Balanced?
These waffles are so well-balanced, even without the toppings, so you know you’re nourishing your body with what it likely needs in a meal!
Protein: The protein powder, chia seeds, soymilk, and oats are giving us lots of nourishment to help keep us satiated!
Carbs: The banana, oats, and any other fruit we choose to top it with are going to be giving us lots of energizing carbs to keep us fueled.
Fats: The chia seeds and peanut butter are going to help keep us full and satiated!
Storage:
These freeze well in reusable Ziploc bags for a couple weeks and can be stored in the fridge for 2-3 days!

Ingredients
- 1/3 medium banana
- 1 chia egg
- 1 tbsp peanut butter
- 1/2 tsp lemon juice
- 1/3 cup oat flour
- 1 tbsp chocolate protein powder
- 1 tbsp cacao powder
- 1 tap baking soda
- 1 tsp baking powder
- 4 tbsp soy milk
- 1 tbsp Honey or maple syrup optional, makes waffles crispier
- 2-3 tbsp chocolate chips optional, makes extra chocolatey
Toppings:
- Leftover banana
- Other fruits: strawberries blueberries, raspberries, etc.
- Peanut Butter
- Maple Syrup or Honey
Instructions
- Make your chia egg.
