This Vegan & Gluten-Free Clustery Chocolate Peanut Butter Granola has the perfect balance of the 2 and you can make the clusters as big or small as you want! Perfect topping for oatmeal, yogurt bowls, smoothie bowls, or just on its own!
Chocolate + Peanut Butter = the way to my heart
I already have an overnight oat recipe for this combo here, but I decided that I wanted to add a new addition to my overnight oat toppings and that is how this granola was born.
Personally, I don’t really eat granola as a cereal too often, I usually just use it for topping. So I definitely prefer to having big chunks of granola. But, the great thing about this recipe is that you can make the clusters as big or small as you like!
And it’s chocolate peanut butter, so you already know it’s gonna be gooood.
Ingredients in Clustery Chocolate Peanut Butter Granola
Rolled Oats: I find that rolled oats have a better texture and bake better here!
Puffed Millet: This adds a really nice texture and look to the granola. You can use any puffed cereal you have on hand
Slivered Almonds: This adds great texture and healthy fats! Use any nuts you have on hand
Maple Syrup: This helps binds all the ingredients, Harden the granola, and add a hint of sweetness
Chocolate Protein Powder: This is optional, but I just like adding in a source of protein! You can substitute it with 1 1/2 tbsp of cacao powder.
Cacao Powder: This adds that nice chocolate flavor! You can use cocoa powder as well!
Peanut Butter: Obviously. Make sure yours is runny and the only ingredients are peanuts and salt! I get mine from Costco!
Coconut Oil: We use just a little here for to Harden the granola and make the cluster!
Chocolate Chips or Cacao Nibs: I used cacao nibs, but you can definitely use chocolate chips instead! Just add the chocolate chips as soon as you take them out of the oven so that they melt onto the granola!
How to make Clustery Chocolate Peanut Butter Granola:
Preheat: Preheat oven to 350 F. Line a baking tray with parchment paper
Mix Dry: Mix together the oats, puffed millet, almonds, protein powder, cacao powder, and cacao nibs
Mix Wet: Mix in maple syrup, melted coconut oil, and peanut butter. Combine well.
Bake: Pour the granola onto the baking tray and spread evenly so that the granola is still all pressed together, but the height is relatively even. Bake for 18-20 minutes. If using chocolate chips. Sprinkle chocolate chips on top as soon as you take the granola out of the oven.
Let Cool: Let the granola cool completely. Break into cluster sizes of your liking! Store in an airtight container at room temperature for 7-12 days!
