These Blueberry Almond Butter Oat Waffles are perfectly fluffy, moist, hearty, leaving your cravings and your body satisfied! And, they take around 10 staple ingredients to make!
On the weekends, a waffle just feels right ya know. During the weekdays, I’m usually too busy to even think about what I want for breakfast. I usually rely on my past self to have made me some baked oatmeal, overnight oats, or I’ll just make myself a quick smoothie.
But when I have time, I love me a good waffle. I especially love when waffles keep me full for a decent amount of time and don’t leave me having a sugar crash after.
Also, sidenote, are you guys Team Waffles or Team Pancakes? I’m defffinitely team waffles, but I feel like most people I talk to are Team Pancakes and I just don’t understand why. Besides the texture piece of it, I feel like pancakes take so much longer to make than waffles and I don’t have that kind of patience when I’m hungry.
What makes these Blueberry Almond Butter Oat Waffles SO Easy
These waffles are perfect for almost anyone, because they’re made with only 10 ingredients that most people have around their house!
Also, they take literally 10-15 minutes to make so you’ll have a quick, healthy, and indulgent breakfast ready in no time.
Why I use Oat Flour as the base
Oat flour is a great base for these waffles because
- Most people have oats in their house
- It’s cheap to make
- They’re a great source of fiber and carbs for sustained energy!
Main Ingredients:
Oat Flour: These are the base of our waffles, but don’t worry if you don’t have oat flour! I never buy any because it so easy to make at home! Just take some quick or rolled oats and blend it in either a blender or food processor until it becomes a fine powder. Done, now you got oat flour.
Tapioca Starch: This helps thicken up the waffles and keeps them fluffy! You can try subbing this with half the amount of cornstarch!
Vanilla Protein Powder: This adds a great vanilla flavor and makes this meal a lot more well-rounded. If you don’t have this, try subbing it with 1-1/12 tbsp of oat flour and ½ tsp of vanilla extract
Chia seeds + Water: This will make our chia “egg” (technically it’s only half an egg). Take ½ tbsp of chia seeds to a cup and add 1 ¼ tbsp of water right on top. Don’t mix it yet. Let it sit for 5 minutes, then mix it and let it sit for another 2 minutes. You can replace these with flax seeds!
Milk + ACV: This will make a buttermilk situation to keep the waffles fluffy. Just combine the 2 and let it sit for 5 minutes!
Honey/Maple Syrup: This adds some sweetness to the batter! Plus we’ll need more for topping. Use Maple Syrup to keep these vegan!
Runny Almond Butter: This adds a slightly nutty undertone and acts as the main source of fat to help with binding all the ingredients! You can sub these for any other nut or seed butter, just know the flavor will be different. Make sure your nut butter is runny! I love this Costco one!
Blueberries: We’ll use these in the batter as well as on top!
How to make:
Prepare: Make the chia “egg” and “buttermilk” and let them sit for 5 – 7 minutes.
Mix: While those are sitting, combine all the other dry ingredients in a bowl and mix. Add the wet ingredients on top once the “egg” and “buttermilk” are done
Let Sit: Let the batter sit for 7-10 minutes so all the ingredients have a chance to react
Pour: Pour the batter into your waffle maker and cook until both sides are crispy and fluffy! Every waffle iron is different, but I usually wait a minute or so longer to open it after the green light comes on on my waffle iron. But again, this varies a lot for each waffle iron brand!
What makes these Blueberry Almond Oat Waffles Balanced?
One of my favorite things about these waffles is that they don’t leave me feeling sluggish or tired after I eat them because they have a balance of all the food groups!
Protein: Our main source of protein here is from the protein powder, but we’re also getting some from the oat flour!
Carbs: The oat flour is filled with fiber and carbs to give us sustained energy
Fat: The Almond butter and chia seeds help bind all the ingredients together while giving us some fats as well!

Fluffy Blueberry Almond Oat Waffles
Equipment
- Waffle Maker
Ingredients
- ½ cup oat flour*
- 1 tbsp tapioca starch**
- 2 tbsp vanilla protein powder
- 2 tsp baking powder
- ½ tsp baking soda
- ½ tbsp chia seeds mixed with 1 ¼ tbsp water
- 1 tbsp almond butter
- ⅓ cup + 2 tbsp non-dairy milk mixed with ½ tsp lemon juice or apple cider vinegar
- ¼ tsp vanilla extract ,optional
- 1 tbsp maple syrup or honey
- Blueberries
Instructions
- To a large mixing bowl, add the oat flour, starch, protein powder, baking powder, and baking soda. Whisk until well-combined.
- Add in the chia seeds, almond butter, ACV + non-dairy milk, maple syrup, and blueberries. Mix until well combined.
- Wait 7-10 minutes for the oats to soak up the batter.
- While you're waiting, preheat your waffle iron It should be on medium high heat.
- Grease your waffle iron and make sure it is HOT. This is key! Test by putting a drop of batter in and make sure it sizzles.
- Pour the batter in and cook until it is fully cooked through on both sides! Every waffle iron is different, but I usually wait a minute or so longer to open it after the green light comes on.
- Top with more blueberries and almond butter
- Enjoy!
