These Blueberry Almond Butter Oat Waffles are perfectly fluffy, moist, hearty, leaving your cravings and your body satisfied! And, they take around 10 staple ingredients to make!

Ingredients
  

  • ½ cup oat flour*
  • 1 tbsp tapioca starch**
  • 2 tbsp vanilla protein powder
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ½ tbsp chia seeds mixed with 1 ¼ tbsp water
  • 1 tbsp almond butter
  • cup + 2 tbsp non-dairy milk mixed with ½ tsp lemon juice or apple cider vinegar
  • ¼ tsp vanilla extract ,optional
  • 1 tbsp maple syrup or honey
  • Blueberries

Instructions
 

  • To a large mixing bowl, add the oat flour, starch, protein powder, baking powder, and baking soda. Whisk until well-combined.
  • Add in the chia seeds, almond butter, ACV + non-dairy milk, maple syrup, and blueberries. Mix until well combined.
  • Wait 7-10 minutes for the oats to soak up the batter.
  • While you're waiting, preheat your waffle iron It should be on medium high heat.
  • Grease your waffle iron and make sure it is HOT. This is key! Test by putting a drop of batter in and make sure it sizzles.
  • Pour the batter in and cook until it is fully cooked through on both sides! Every waffle iron is different, but I usually wait a minute or so longer to open it after the green light comes on.
  • Top with more blueberries and almond butter
  • Enjoy!
