This is THE BEST One Pot Thai Red Lentil Curry ever! It’s packed with flavor and nutrients, while coming together in 1 pot in under 45 minutes! One of my favorite meals!
Thai food has to be one of my favorite cuisines.
Most of the food is SO simple to make but it’s still filled with SO much flavor. A
nd this One Pot Thai Red Lentil Curry is no different.
Made with a creamy base of tomato sauce and coconut milk and filled with spices and lentils, this one pot meal is definitely one of my absolute favorites.
Plus, it’s pretty affordable because it is a lentil-based dish, and it’s great to make ahead for busy weeks!
Ingredients in One Pot Thai Red Lentil Curry
Red Lentils: I love using Red Lentils in this dish because they get a lot softer than brown or green lentils. But, I have tried this with brown lentils and they turned out great too! I like to soak my lentils for at least 4 hours in water, but you can also soak them in boiling water for 1 hour or so.
Full Fat Coconut Milk & Tomato Sauce: This is going to be the base of the curry. I wouldn’t recommend using the Lite Coconut Milk just because it doesn’t have that same creaminess!
Aromatics and Spices: Onion and garlic plus lots of spices are what give this curry that extra boost of flavor! If you don’t have one of some of the spices, don’t worry about it!
Thai Red Curry Paste: This is a must for this curry! I use this one from Thai Kitchen!
Miso (Optional): Miso Paste is optional, but I really like for that extra depth of salty flavor.
Veggies (optional): Veggies are also optional, but adding some spinach or kale in is great because it wilts down to pretty much nothing! I also find that broccoli goes really well with this!
How to Make One Pot Thai Red Lentil Curry:

Sauté onions: Heat the oil in a pot and sauté the onions until they’re translucent
Make Sauce Base: Add in the tomato sauce, coconut milk, Thai red curry paste, miso, spices, and veggie broth. Mix to combine well (you may have to mash the miso) and bring to a simmer.
Cook Lentils: Once simmering, add in lentils and broccoli (if using) and let it come to a simmer again. Then cover and let cook for 15-25 minutes, or until the lentils are cooked. Stir every 5 minutes or so to prevent the lentils from sticking.
Garnishes: If using spinach or kale, add that in a stir until wilted down. Then turn off the heat, add in cilantro and lemon juice on top, and enjoy!
Why is this Balanced?
Protein: Lentils are such a great source of plant-based protein
Carbs: While there are some carbs from the lentils, curry is usually paired with a grain like rice or bread to make it a more satisfying meal!
Fat: The coconut milk is giving us lots of satisfying fats and flavor!
Storage:
Store covered in the fridge for 3-5 days!

Thai Red Lentil Curry
Ingredients
- 1 tbsp olive oil
- 1/2 large yellow onion
- 1 1/2 cup red lentils uncooked
- Spice Blend below
- 1 15 oz can full fat canned coconut milk
- 1 15 oz can canned tomato sauce
- 1/3 cup veggie broth
- 1 4 oz container thai red curry paste
- 2 tbsp miso
- 1/2 cup broccoli florets
- 1 tbsp lemon juice
- 1 large handful spinach
- 2-3 tbsp chopped cilantro
Spice Blend
- 2 tsp garlic minced
- 1 tsp ground ginger
- 1 tsp ground coriander
- 1 tsp garam masala
- 1/2 tsp red chili powder
- 1/2 tsp salt
- 1/2 tsp black pepper
Instructions
- In a small bowl, add all the spices together. Set Aside.
