These Vegan Apple Pie Overnight Oats seriously taste like I’m eating apple pie for breakfast and I’m not mad about it. The warm, cinnamon, sautéed apple, the creamy oats, and the crunch from the pecans or walnuts give this breakfast the most nostalgic feeling.
I’ll be honest, I didn’t grow up eating pie. My family just wasn’t into it (unless it was French Silk Pie, but I feel like that doesn’t really count as a pie it just feels like I’m eating whipped cream) so I never really had it and developed a taste for it.
But then, on the greatest of Thanksgivings, I had apple pie and I was absolutely hooked.

We all know that overnight oats are probably my favorite breakfast, and so it was inevitable that I created an apple pie overnight oats recipe.

This recipe has SUPER easy sautéed apples as a topping and mix of a creamy and crunchy base of oats – it’s so good I want it right now.
Why are these overnight oats amazing?
I love overnight oats in general because they’re
- So easy to make
- A million different flavors
- Absolutely delicious
- Packed with so many different nutrients
But, I loooove these overnight oats because the sautéed apples make me feel like I’m having dessert for breakfast and that’s always a win in my books.
Ingredients in these Vegan Apple Pie Overnight Oats
Rolled Oats: I like using rolled oats because I personally like the texture more and because I make my overnight oats the night before, I feel like the rolled oats soak up more of the liquid that quick oats do. But, if you’re making these a couple of hours in advance, I would definitely use quick oats!
Chia Seeds: The chia seeds and the rolled oats help soak up all the liquid and make the oats thicken up! They’re also a great source of plant-based Omega 3’s! You can substitute with an equal amount of flax seeds if you don’t have any chia seeds.
Salted Caramel Protein Powder: I love adding a protein powder to my overnight oats because it’s an easy way to add in some protein, and it also adds a lot of flavor. Vanilla also tastes really good here! Just make sure that you’re using a protein that tastes good haha. I love using the Tropeaka brand!
Non-Dairy Milk: I usually use whatever milk I have on hand! Usually its soy, cashew, coconut, or oat and those all work well! Any milk should do though!
Non-Dairy Yogurt: I either use the So Delicious Plain Coconut Yogurt or the Forager Cashew yogurt. Personally, I like the Forager one better because of the consistency, but any yogurt you have should do! If you use a Greek yogurt, the oats will likely be a little more on the thick and creamy!
Apple: The star of the show! I usually use Gala apples, but any apples you have on hand should do the trick!
Cinnamon: This adds that apple pie flavor to the apples. I know some people like more or less cinnamon than others, so feel free to adjust to your liking!
Lemon Juice: We just add a little lemon juice at the end to prevent the apples from browning overnight and to a litttttle zest to the oats – you can’t really taste it, the cinnamon really overpowers it
Nut of choice: The nuts on top add a good ol’ crunch that really just makes the oats taste so much better. I love using pecans or walnuts!
How to make these Vegan Apple Pie Overnight Oats
Overnight oats are SO easy to make which is why I love them. These ones take about an extra minute or two, but it’s well worth it 🙂
In the bowl or jar you want to store your overnight oats, add in the dry ingredients – rolled oats, chia seeds, cinnamon, and protein powder.
Then, add in the yogurt and milk.
Next, take your apple of choice, and cut off about 1/3 of it. Take the 1/3 piece of apple and diced it into small pieces. Add it to your overnight oats.
Take the other 2/3 of the apple and chop it into the cube size of your choice.
Heat up a small pot on medium heat. Add about 2 tbsp of water to it. Once it’s hot, add in the chopped apple and cinnamon. Sauté it until the apples have softened and the apple mixture is fragrant. Take out just the apples from the pot (not the water) and place it in a separate bowl to cool.
Once the sautéed apples have cooled, add the lemon juice to them and cover both bowls and place them in the fridge.
When you’re ready to eat the next morning, simply add the sautéed apples on top of your overnight oats, top with nuts of choice, and enjoy!
How to eat these Overnight Oats
IDK if I’m weird, but I really don’t like hot oats I don’t know why. But if you do, feel free to heat the oats up in the morning in a small pot, then take it out and saute the apples again just enough to re-heat them and enjoy 🙂
I personally am lazy and never reheat the apples and they still taste amazing!
Why are these Overnight Oats Balanced?
Another reason why I love overnight oats is because they’re such an easy meal to customize and make balanced for you!
Protein: We’re getting lots of hearty protein from the protein powder, the oats, and the chia seeds.
Carbs: The apple and the oats give us a combination of slow and fast digesting carbs, so we’ll be getting some quick energy and some slow releasing energy, which is great!
Fats: The chia seeds and nuts will be giving us fats to keep us full throughout the morning!

Vegan Apple Pie Overnight Oats
Ingredients
Overnight Oats
- ½ cup rolled oats
- ⅛ - ¼ tsp cinnamon
- 2 tbsp salted caramel protein powder
- 1 tbsp chia seeds
- ½ cup soy or nut milk of choice
- ⅓ cup non-dairy greek yogurt
- 1 apple, divided
Sautéed Apple
- Apple from above
- ¼ - ½ tsp cinnamon
- ½ tbsp maple syrup optional
- 1 tsp lemon juice
Toppings
- ¼ cup pecans, walnuts, or nuts of choice
Instructions
Overnight Oats
- Mix together the rolled oats, cinnamon, protein powder, and chia seeds together in a small bowl.
- Add in the non dairy milk and yogurt – stir well until everything is combined
- Take the apple and chop off 1/3 of it. Dice the apple into small pieces and add it to the oats. Stir well to combine and cover.
Sautéed Apple
- Take the rest of the apple and dice it into cubes.
- Heat some water in a small pot over medium heat, once it’s hot,add in the apple, cinnamon, and maple syrup. Sauté until the apples have softened to your liking. Then, place in a small bowl to cool.
- Once it has cooled, add in the lemon juice, and store both bowls in the fridge.
Assembly
- When you’re ready to enjoy, add the sautéed apple on top of the overnight oats and top with nuts.
- Enjoy!
