Vegan Apple Pie Overnight Oats

These Vegan Apple Pie Overnight Oats seriously taste like I’m eating apple pie for breakfast and I’m not mad about it. The warm, cinnamon, sautéed apple, the creamy oats, andthe crunch from the pecans or walnuts give this breakfast the most nostalgic feeling.

Ingredients
  

Overnight Oats

  • ½ cup rolled oats
  • ⅛ - ¼ tsp cinnamon
  • 2 tbsp salted caramel protein powder
  • 1 tbsp chia seeds
  • ½ cup soy or nut milk of choice
  • cup non-dairy greek yogurt
  • 1 apple, divided

Sautéed Apple

  • Apple from above
  • ¼ - ½ tsp cinnamon
  • ½ tbsp maple syrup optional
  • 1 tsp lemon juice

Toppings

  • ¼ cup pecans, walnuts, or nuts of choice

Instructions
 

Overnight Oats

  • Mix together the rolled oats, cinnamon, protein powder, and chia seeds together in a small bowl. 
  • Add in the non dairy milk and yogurt – stir well until everything is combined
  • Take the apple and chop off 1/3 of it. Dice the apple into small pieces and add it to the oats. Stir well to combine and cover.

Sautéed Apple

  • Take the rest of the apple and dice it into cubes.
  • Heat some water in a small pot over medium heat, once it’s hot,add in the apple, cinnamon, and maple syrup. Sauté until the apples have softened to your liking. Then, place in a small bowl to cool.
  • Once it has cooled, add in the lemon juice, and store both bowls in the fridge.

Assembly

  • When you’re ready to enjoy, add the sautéed apple on top of the overnight oats and top with nuts.
