Healthy Maple Oat Breakfast Bars

These Maple Walnut Breakfast Bars are the perfect fall food to make ahead so that you always have something healthy waiting for you! I love to have them as a little midday snack or as dessert!

Ingredients
  

  • 1 chia egg
  • 1 cup nut milk of choice
  • ¼ cup sunflower seed butter
  • cup maple syrup or honey
  • ¼ cup coconut oil
  • 1 ¼ cup rolled oats
  • 3 tbsp coconut flour
  • ¾ tsp baking soda
  • ¾ tsp cinnamon
  • ¼ cup vanilla protein powder
  • cup chopped walnuts
  • cup shredded coconut

Instructions
 

  • Preheat oven to 350 F.
  • In a medium sized bowl, combine egg, milk, nut/sunflower seed butter, maple syrup and coconut oil.
  • Add in all dry ingredients and combine well.
  • Pour into a parchment paper lined 8 x 8 tray.
  • Bake for 20-25 minutes.
