Healthy Maple Oat Breakfast Bars
These Maple Walnut Breakfast Bars are the perfect fall food to make ahead so that you always have something healthy waiting for you! I love to have them as a little midday snack or as dessert!

- 1 chia egg
- 1 cup nut milk of choice
- ¼ cup sunflower seed butter
- ⅓ cup maple syrup or honey
- ¼ cup coconut oil
- 1 ¼ cup rolled oats
- 3 tbsp coconut flour
- ¾ tsp baking soda
- ¾ tsp cinnamon
- ¼ cup vanilla protein powder
- ⅓ cup chopped walnuts
- ⅓ cup shredded coconut
Preheat oven to 350 F.
In a medium sized bowl, combine egg, milk, nut/sunflower seed butter, maple syrup and coconut oil.
Add in all dry ingredients and combine well.
Pour into a parchment paper lined 8 x 8 tray.
Bake for 20-25 minutes.
